We always enjoyed breakfast (or lunch, or dinner) at the Crystal Palace. The children (and we) enjoyed the Winnie the Pooh characters there. It gave us time to get in a weather controlled environment, time to eat, and we didn’t have to wait in line to see the characters – they came to us!
Here’s the Breakfast Lasagna recipe from there:
Pastry Cream (make first)
1 1/2 teaspoons vanilla extract
6 egg yolks
1 1/2 cups milk
1/4 teaspoon salt
1/4 cup all purpose flour
3/4 cup sugar
In a 2 quart saucepan, combine sugar, flour, salt, and milk over medium heat and cook stirring until it thickens. In a small bowl, beat egg yolks slightly, with a fork. Beat in a small amount of the milk mixture into the yolks. Slowly pour the egg mixture back into the milk mixture. Stirring constantly, cook over medium low heat until it thickens. Remove from heat and stir in vanilla extract. Chill until ready to use.
Assembly:
6 pancakes
6 waffles
1 pound strawberries (sliced)
8 ounces blueberries
Put a think layer of Pastry Cream in a pan, make a layer of waffles, then a layer of Pastry Cream. Layer half the strawberries and half the blue berries on top. Layer on top of the fruit a layer of pancakes, then another layer of Pastry Cream. Garnish with the rest of the fruit.
Bake at 350 for 20 minutes.
